Cultus Boni Olio Extravergine di Oliva
In 1962 Badia a Coltibuono bottled for the first time the estate’s extra-virgin olive oil choosing the distinctive square bottle which has become it’s distinctive trademark. The innovation was to treat Olive Oil like fine wine, taking the utmost care in the selection and pressing immediately after harvesting.
Harvesting method: Manual and mechanical harvesting
Olives and Pressing. The olives are picked and processed the same day to ensure the best quality and maximum freshness.

An unusually cold spell in February caused some frost damage resulting in lower yields. Excellent quality thanks to a careful harvest and a very short delay between harvesting and milling. A very balanced oil with good intensity and a mild peppery note.
The Coltibuono Extra-Virgin olive oil has a golden yellow color with greenish reflections. It is light yet tasty, with an intense fruity bouquet of olives. The slight peppery sensation that can be noticed at the back of the palate and the slightly bitter aftertaste are typical of an oil produced using hand-picked olives which are not excessively overripe.
