Vinification / Ageing
The grapes are vinified in small wine vessels with indigenous yeasts and manual punching. Aging: 20-24 months in barriques with subsequent maturation of at least 6 months in oak barrel vats and another 6 months of refinement in bottle.
Vintage
After a cool spring, with a few days of rain in June, a hot summer followed, balanced by new rainfall phenomena in September. The organic management of the soil has contributed to the healthiness of the vines and the good ripening of the fruit. Excellent quality, with balanced and well-structured wines. Harvest: 16 – 30 September
Tasting notes / Pairings
Intense and deep ruby red color with purple reflections. On the nose, strong floral notes of violets and irises with spicy notes of red fruits, vanilla and cloves. In the mouth it reveals a great structure: harmonious, dry and savory, with well-balanced acidity; very round and persistent with great aging potential. Good tannins that refine over time to become soft and velvety.
